The resort brings warmth to the season with a comforting take on pairings – tea and chocolate. Join Park Hyatt Aviara Executive Pasty Chef Franck Riffaud and local Certified Tea Master Chas Kroll on Sunday, January 20th for a course in the art of tea pairings followed by a high tea service. Highly regarded in the industry and one of a handful of certified tea masters, Kroll will explain the history behind each tea, their special properties and how the richness of the chocolate brings out the depth of flavors in each blend. Masters of Food & Wine is honored to introduce guests to this truly distinctive and rarely experienced tea tasting.

Led by San Diego Tea Master Chas Kroll and Executive Pastry Chef Franck Riffaud,
guests will taste five handmade chocolates of varying cacao paired with the finest
international teas:
• Barry Lactee (35%) paired with Imperial Gyokuro (Japan)
• Guayaquil (56%) paired with Oriental Beauty (Taiwan)
• Manjari (64%) paired with Superior Earl Grey (Sri Lanka)
• Jivara Lactee (40%) paired with Pu-erh with Chrysanthemum (Hong
Kong)
• Valrhona Caramélia (milk chocolate), paired with Hu Kwa Lapsang
Souchong (Taiwan)
High Tea Service

Guests will enjoy a formal, traditional English Tea, including a selection of finger
sandwiches, warm sultana scones with seasonal jellies and custards, mini-pastries
and tea cakes.
